I have just a few ideas which can be made in advance - souvlaki skewers (lamb, chicken, pork, beef, shrimp), skewers marinated to mimick a Horiatiki salad (tomato, cucumber, olive, feta, green pepper, red onion), spanakopita, humus with pita triangles, & dolmathes.

I have multiplied this, subbed different veggies and made a vegan version. My only tip is not to overcrowd the pans as you don’t want to it to poach in too much liquid. A big Greek salad and, as Nancy suggested, an appetizer buffet would be perfect.
A possible menu - a buffet of mezze, most of which can be prepared in advance…dips, breads, eggplant and potato sliced or cut in wedges and cooked, filled pastries, baked stuffed tomatoes, cheese with oil and herbs on top, marinated and grilled fish, lamb chops.
