Is using almond flour ok so they would be gluten free? Or if not almond flour would another one work that is gluten free, maybe oat flour?

I see. I problem in using a GF flour jn this (famous) recipe, as it’s mostly to hold things together (no rising).
However, I think the almond flour would make the latkes (very) dense.
The oat flour would probably work well.
Or I’d maybe use something like gram (chickpea) flour, if you have or can get it.
