Hi ERN! I'm not sure what recipe this refers to (maybe this one? https://food52.com/recipes/12395-state-fair-cream-puffs) but yes, there's no harm in doubling. I've read that the only time it gets tricky is when baking soda or powder is involved. Hope this helps!
