Here are a few tips - article in link below & two tips from general experience: 1) Use the batter immediately after mixing the wets and dries (like muffins - the baking chemical have started to work, best no to let them sit). 2) Look for bubbles to appear on the surface of the cooking pancake, then flip soon after.
