Total cook time including 450 and 400 degree settings

In the instructions you state, "Check the internal temperature after the bird has roasted for 4 minutes per pound, e.g., for a 12-pound bird, after 48 minutes.". Is this 4 minutes per pound after the 30 minutes at 450 degrees, or just in total? e.g. for a 12-pound bird, 48 minutes total with 30 at 450, and 12 at 400?

I think Antonia means for you to check at the 4 minutes per pound total time- so yeah- the 12 pound bird gets checked after being in the oven for 48 minutes. That's after it spends the thirty minutes at 450F and has been reduced to the 400F. She states that the bird will not likely be done, especially if it is a larger one, but that a small one of maybe 10-11 pounds might be. So you would start the roasting at the 450 degrees for thirty minutes and turn it down to 400 degrees, then check the internal temp in another 18 minutes. The oven temp timing is different than the check temp of bird timing.

Yes, that's right. Lori T has explained it perfectly. (Thank you, Lori!!)

The 48 minutes is total roasting time that may be required - though my 10 - 11 pound birds typically require more than that. My fridge is very cold and my house is on the cool side, so the longer roasting time may be needed because, even with an hour out on the counter, the turkey is still a bit cool.

It's best to start checking early, to avoid overcooking.
