How is the cheese prepared for this recipe?

This is probably a dumb question, but is the Gruyère actually grated (smallest hole on box grater) or shredded? I did grate the first time and the filling was super thick. I added an egg to keep it pourable

While baking and pastry recipes (as in the crust for this tart) often need to be exact, the filling does not.
While the ingredient list says grated, you could do what you prefer. like shredded, and find it mixes well with the whole filling. Or you could even chop with a knife.
Your choice.
