Can I make the crust in advance and keep in the fridge a few days before pressing into the pan and baking?

Yes, you can store it for a few days in a tightly sealed bag or wrapped in plastic wrap. Just take it out of the fridge to warm up a bit before you want to roll it out. After resting in the fridge for a day, it will be even easier to roll out and fit, too. You can also make the curd up ahead of time, too, and store that in a covered container in the fridge as well.

Yes, store unbaked pastry (in a ball or fitted to pie plate) up to 3 days in fridge or 3 months in freezer.

To use:

• bring dough or crust from fridge to room temp, roll out if needed and proceed..

• defrost dough from freezer overnight in fridge, roll out if needed and proceed.
