when making mashed potatoes, should you cut them up and soak them for over 24 hours?

Truthfully, no you shouldn't. IF you really need to have them pre-prepped, then peel them and store the whole uncut potatoes submerged in water overnight. It will save you peeling prep time, but it won't do your potatoes any favors. Just don't go more than 24 hours or you can get some weird sweet taste to the final mash.
