How long can you leave out eggs and butter for baking?

I took out eggs and butter to bake, forgot about them overnight. Still good or toss and start over?

A restaurant or bakery would be compelled to toss everything due to modern food handling regulations.

The FDA will only say for you to toss.

A hundred years ago, this wouldn't even be a question for the typical home baker. Electric refrigerators were a newfangled gadget and everyone would say "My grandmother never refrigerated the heck out of everything! I'm baking with these ingredients!"

For what it's worth, eggs are pretty inert at room temperature. Consider how they are laid naturally. Most of the risks come from how eggs are processed in commercial operations and how they are handled after they are cracked open.

Butter -- with its high fat content -- is a pretty inhospitable place for microorganisms.

Anyhow, consider these thoughts and go read the guidelines on the FDA website. Then make your decision.
