Vegetarian, Type 1 Diabetic with Celiac Disease who can't eat onions or garlic

Been baking and cooking my whole life, but as the dietary needs/allergies/restrictions mount, I'm finding it increasingly difficult to keep up with making all meals at home while also devoting time to my favorite hobby - baking. Suggestions? Thoughts? Best practices? Favorite recipes? Time-saving tips? Meal planning tips?

Very challenging! Pao de quejo (Brazilian cheese bread) popped into my head. Tapioca flour. Not sure what it will do to your blood sugar but they are small.
