Tortilla - need some ideas for making the Spanish potato pie
We were in London’s Borough Market recently, and enjoyed a slice each of tortilla - he had spinach, and I had the chorizo.
Internet searches for recipes for tortilla bring up two types - the burrito and taco variety, and the Spanish potato pie sort, but few recipes.
Does anyone have a basic recipe for the layered pie type so that I can recreate this at home, and make variations, please? Appears to me to be a dish which can come warm, but also at room temperature later.
Any ideas?

You're in the right place. Here are some recipes + variations on the classic Spanish tortilla -- which would be a perfect thing to have on hand for visiting guests. It is traditionally served at room temp but it is delicious warm, too.
