You can fry them now. Should they get soften before you eat, just pop them into the oven to re-crisp.

I'd wait and do it just before. They don't take long to cook and if you want to save time prep everything else. I like to add a nice finishing salt just after I've removed each tortilla from the hot oil. Enjoy!
