Warning about storing yeast pancake dough

WARNING - if you store unused yeast pancake dough in the fridge, follow two guidelines
* no more than the one day (24 hours) as recommended in the recipe;
* in a loosely covered bowl or container, to allow for gases to escape.

BACKSTORY - I've made the recipe many times before, but this time had leftover dough, so I put some in a mason jar in the fridge. Left it a little longer than one day, and the dough began to ooze out. For various reasons, didn't need the pancakes so decided to discard the extra uncooked dough. Found the expanding gases had made a very tight seal. Finally, opened the jar and it was a Blob horror movie.

Cleaned up and vowed next time to either all the pancakes at once and freeze extras. Or only store one day.

HOW TO STORE. If you to store in the fridge, do it with a loose cover - a plate on top of a bowl, some foil or cling film with an air hole, or an unsecured snap lid.

I used a recipe from Martha Stewart, which is very reliable....easy and good to know both for the nice texture the yeast gives the pancakes and for when you've run out of baking powder.
There are others from food.com, Red Star yeast or Fleichmann's.
The problem I encountered is just from letting the extra batter stay a little too long in the fridge.
