1) any of Penelope Casas books, about a handful, about Spanish cooking. Published beginning the mid 1980s, not mentioned a lot these days but like Diana Kennedy to Mexican cooking and Julia Child to French - an American who traveled widely and lived some or long time in the country she wrote about.
2) "The Family Meal" by Ferran Adria, 2011. Home cooking from one of the most adventurous chefs of the 20th century. Adapted from the staff meals commonly eaten before dining service begins.
3) "The Food of Spain" by Claudia Roden, 2011. A combination of food history and good recipes from a woman who grew up in Cairo, a city of many food traditions, then moved to Britain and worked in many European countries.
