Can I cook this in a sheet pan instead of cast iron?
Can I make this in a foil covered sheet pan instead of a cast iron pan, for easier clean up and ability to scale up the recipe and still fit it all in one place?

You probably risk warping the sheet pan while it is preheating under the broiler empty. But if you don't care about that or if you know your sheet pans are thick enough to withstand that heat (while empty), go for it.
