How to make my bread have a stronger yeast flavor

I see people talking about letting bread dough rise in the refrigerator will that help make the yeast taste stronger

Hi Alvin. I just spoke with Nea, one of our Test Kitchen chefs, and she agrees! She says, "Yes that's right! The longer you let the dough rise the more of a sour flavor it will have. You can let the dough rise at room temperature the first night, then transfer it to the fridge for the second day/night!"
