Storage of these for on the fly meals?

Sounds amazing! I'd love to try these and freeze them for ready to go meals for when the kiddos are extra fussy-when do you think we should freeze them? Prior to bake or after?

Honestly, I think you could do either. If you froze them unbaked, I would let them thaw and rise in the fridge before baking. So then if your goal is to have something ready-to-go, I'd bake them either halfway or fully, wrap individually, and freeze, then reheat in the oven, wrapped in foil. Maybe remove the foil for the last couple minutes to crisp them up!

Yes and.
If you cook them fully, and take from the oven or the fridge, they will be safe for the usually advised 2 hours at room temperature.
If you cook them full and freeze them, then take from the freezer on an outing, they will thaw and be ready to eat (at room temp) in 3-4 hours. So longer than from baking for from fridge.

Another note - with back-to-school promotions and various clever products for workday lunches, I’m seeing lots of ads for boxes that either keep your food cold or heat them up (like a mini stock pot). Maybe worth a look.
