Can not make brown butter, it keeps curdle into a big clump.

I try making butter on a non stick pan. I put it on medium heat and stir constantly just like the instruction. However, the milk solid curdle up into a big lump and not browning at all. What did I do wrong???

My first thought is, are you using real butter and not a man-made buttery spread of some kind? Real butter will melt, then sputter, as the water in it boils away.I use a regular saucepan, not non-stick, and have noticed that some of the milk solids WILL stick to the bottom of the pan, but they can be carefully scraped up as you stir.

One problem that occurs to me is that you're possibly using too much butter for the size of pan, so the liquids don't have enough chance to evaporate.
