Can these be cut using a cookie cutter after chilling?

Hmmm....I don't know for certain. I haven't tried baking them this way. They do spread a bit.
I would try cutting them before chilling on a baking tray. Then, bake directly from fridge. They should hold the shape better this way. Try making a couple of 'test' cookies with this method.
