Do you have riches that serve 1 or 2 people?

I'm recently widowed and would like easy recipes that serve 2 people. That way I can have an entree with one leftover meal.

Sorry for your loss.
Eric Kim, a former writer here (and now at NYTimes) used to write a column and recipes called Table for One....dishes he made for himself (and/or a few leftovers).
Eric's gone but the recipes are still here.
