Oil separating to top in fridge

This is delicious, however after a few days all the oil separated to the top and is quite unappetizing in congealed blobs after I tried mixing it back in. Did I do something wrong, is there a way to prevent the separation?

Hi Siddo!

KLS is right, unfortunately oil will congeal in the fridge. You could handle as folks recommend below (leaving out at room temp) OR you could simply skim off the oil bits and discard if its giving you the ick.

Olive oil will do that. Let it sit at room temperature for a bit, and stir the oil in. It will be fine

Agree with KLS about letting the mixture come to room temperature and the oil reverting to liquid.
But/and you could also just not add the oil (many pickle recipes don't have it). Or add when serving, as a garnish.
