For the pork section you specify the different kind of soy sauces. What kind of soy sauce is used for the sauce (light?)

Good catch. The soy sauce in the sauce should be light soy sauce. This is the standard soy sauce you're used to buying at the grocery store. For highest accuracy, we recommend a Chinese soy sauce which is saltier than Japanese soy sauces.
