KLS below is right! Ham hock not cooked for ~1 hour will definitely still impart that smokey flavor but it may be hard to shred and distribute the meat. If you wanted to use some hocks in this specific recipe, my advice would be to add them to the stock and hold on adding the other ingredients like the potato and greens. Let simmer for 20 to 25 minutes then continue with the recipe as written. Hope this helps!
