Thanksgiving Turkey Recipe Review

Hello this is my current idea of a thanksgiving turkey recipe. If there is any input anyone has that would make this more delicious, please let me know :)

Brine
7 quarts (28 cups) water
1 1/2 cups coarse salt
6 bay leaves
2 tablespoons whole coriander seeds
1 tablespoon dried juniper berries
2 tablespoons whole black peppercorns
1 teaspoon black or brown mustard seeds
1 bottle dry riesling
2 medium onions, thinly sliced
6 garlic cloves, crushed
1 bunch fresh thyme
A shake of lemon peel
2 teaspoon aleppo pepper
2 teaspoon truffle oil


Compound Butter (under the skin)
1 cup unsalted room temperature butter
1 tablespoon fresh rosemary, finely chopped
2 cloves grated garlic
1 small grated shallot
1 teaspoon lemon peel
1.5 teaspoon aleppo pepper
2 tablespoons fresh parsley
Pinch of seasalt.
1 teaspoon balsamic


Aromatics
1 large onion (quartered)
1-2 lemons (halved)
1 bunch fresh thyme
2-3 garlic cloves (smashed)
1-2 carrots (roughly chopped)
A few sprigs of fresh rosemary
1 bunch fresh sage

This looks truly awesome. Love the use of aleppo throughout and I've never brined with white wine! Should be super delicious.

Truly the only thing I'd mention, is that for the compound butter, dry herbs don't have to feel like a cheap/hacky alternative. They bring something totally different to the table that I think is super valuable in seasoning poultry. A healthy balance of flavor-concentrated dry herbs, with addition of the bright, verdant nature of fresh herbs can pack a punch when brushed onto a turkey.

Let us know how this comes out! We'll just be over here waiting for the invite to your Thanksgiving.
