For fudge making, I imagine the humidity wouldn't necessarily effect what temperature you're aiming for while cooking. Instead my concern would be the setting process. Without refrigeration is may take longer for the fudge to set completely. However, barring the ambient temperature in your kitchen being above 90 degrees, I'm certain it will set eventually.
Either way I think your safest bet would be to set the fudge in the fridge and store there until time to eat. Just let it come up to room temperature before serving.
