Another idea - decide how much stuffing to make based on combination of what you need for Thanksgiving dinner AND planned-overs (😊 not leftovers).

Take advantage of the one-time prrp to get more meals out of it.

You can make stuffing balls, fried stuffing (like polenta) and turkey sandwiches with stuffing.

Agree with the previous comment, serving sizes are hard on thanksgiving, but the recipe makes enough to stuff a large turkey (5 cups of the stuffing are reserved for this) and fill a 10x14 pan with extra, so it's a generous amount!

The recipe only describes the volume of food it creates without assigning a number of servings.

That's probably wise given that standard portion sizes are largely tossed out the window for Thanksgiving.

It's up for you to decide based on your knowledge of your dinner table guests that particular evening. Little old ladies? NFL linebackers? Teenage boys? Trenchermen? For sure there are many Americans who adore gutbusting portion sizes.

If you look at recipe ingredients, it is a mouthful. 2.5 lbs. of sausage, a pound of bread, probably a couple pounds of veggies. We are realistically talking about five pounds of stuffing. It's going to serve more than 4 people, especially if they are eating a huge bird, mashed potatoes.

You'll have to think about the number of other dishes that you will be serving as well. If you have fewer side dishes, people will hit the stuffing much harder. But this is rich (it's pork sausage + bread). I'm positive that I personally could not put down a half pound of this.

In my house, I'd probably make a half recipe to serve eight and expect leftovers.

But for sure my dinner guests tend to have lighter appetites than some of the bacchanals I've witnessed elsewhere. And there are no teenagers in the house.
