Spatchcocked turkey cooking time
How many minutes per pound do I cook it? I read 6 from the turkey council. Your recipe seems to cook it way longer than that.

I want to echo Nancy below! For smaller birds (sub 10lbs) it could be as little a 50 minutes total! 6 to 8 minutes per lb is semi-reliable, but can also be a swing of 24 minutes for a 14 lb bird. So! I would say that by far the easiest way to tell would be to use a thermometer to wait until the thickest part of the breast registers 165F.
We love this style of thermometer: https://food52.com/shop/products/6617-digital-radio-roast-thermometer it allows you to probe the turkey from the start and have the monitor live outside the oven. You can set an alarm and having it placed in the breast from the start would reduce the need to open and close the oven over and over. Also without needing to test a bunch of times you won't have juices running out of your bird after stabbing so many times.
Hope this helps!

See, for example, Serious Eats site.
However don’t rely 100% on timing.
Rather, cook until internal temp is 165F.
Some people take it out of the oven a few degrees less than that, expecting the meat to keep cooking a few minutes out of the oven.
Test temp again and roasted e more if needed.
