SOS: Evaporated Milk Substitute?

I neglected to read my recipe for pumpkin pie carefully. Saw I had one can of evaporated milk in the pantry and figured I was good. Lo and behold: the recipe calls for 3 cups of evaporated milk, so one can won't do. I have coconut milk and sweetened condensed milk on the shelf and whole milk and heavy cream in the fridge. Can I use any combination of these to come up with the additional 12 ounces I need?

Silly me. I looked at the recipe again, and I see that it's for TWO pies. So, I have what I need, But I'd love to know the hack for the next time I'm in a pinch.
