I am having a major turkey drippings crisis
Help! My fat is not separating in my drippings, and i’m thinking it’s because I used olive oil drizzle for the vegetables underneath, is there anything I can do? I can use stock for the gravy but I really wanted the juices

I agree with Nancy I doubt this was due to using olive oil. If you want to force the drippings hand, you could throw them in the freeze for an hour and the fat would hopefully rise to the top as it cools.
If not, I personally don't see why you couldn't still use the fat-laden drippings for gravy but also feel free to use stock if you'd prefer to lose the fat.

Good luck with your turkey and gravy.
I don't think the olive oil is a cause of problems.
Maybe either the turkey was not cooked enough, or should have been suspended over a wire rack.

And, if not, yes you can make gravy from broth, cooked vegetables and other fat.
