Awesome question here. I agree with everyone below that pears and apples are basically a one to one swap in a situation like this. I would go for a mix of tart and sweet pears, to ensure a balanced dessert.
A large apple typically weighs around 100 grams or 3.5 ounces (core, skin and all). So for 3 you're gonna need 300 grams or ~10 ounces of pears.
