Timing on finishing beef wellington

Cooking a beef wellington for the first time. It’s at the wrapped in proscuitto with the duxelles stage. Should I take out of the fridge an hour before it’s time to wrap in the puff pastry?

A Wellington at this stage should be chilled for at least 30 minutes before wrapping and should not be left out at room temperature.

I always wrap mine before I put it in the refrigerator. If you don’t refrigerate the pastry too, it may be too soft and slump in the oven.

Roast at 450 until crust is browned approximately 45 minutes. Check the meat on the center with a meat thermometer. It should read 85 degrees. Place on counter and let rest about 45 minutes. Carry over cooking should take your roast to a perfect 130 degrees and be a perfect medium rare.
