I made marmalade but used 1/2” headspace

I processed it in a water bath, and they all sealed perfectly. The marmalade is set. After I finished it I realized that the headspace was supposed to be 1/4” not 1/2”. I’ve looked online and it says that if marmalade has set, you can’t reprocess it. I understand that using less headspace can mean discolouration and spoilage. But since it is well sealed, I’m wondering if they will be ok, but maybe instead of 12-18 months, maybe I just need to used up within 6 months? Thank you in advance for any advice!

The worst that is likely is that a slight discoloration will happen at the top of the marmalade due to oxidation. As long as there are no other signs of spoilage, and the lid seals remain intact, it will be fine to eat. You don't have to be in a rush to use all your product. To help avoid the darkening, store your jars in a dark spot, out of a lot of sunlight. The color change just affects appearance, not taste or safety. It also sometimes just happens with lighter colored jams, marmalades and jellies- regardless of the headspace, as time passes. That's why they say to eat them within about 18 months. But you can leave it longer, as long as that seal is intact. You can scrap off the dark part and discard it if you like, or you can melt it and use it as a glaze on plain poundcake, muffins, etc.
