This is my favorite, and you don't necessarily have to use red quinoa.

Quinoa with scallions and "craisins" in a curry white balsamic vinagrette. The fruit and the curry powder compliment each other and the vinagrette keeps the quinoa moist.

This is my own recipe http://www.food52.com/recipes/2206_left_leaning_quinoa but if you do a quinoa search on this site you will find about 8 pages of recipes---at least.

Tabbouleh with quinioa instead of bulgar wheat.
Chopped Parsley, quinioa, chopped tomato, Lemon juice, olive oil, salt and pepper (at it's most basic).
Mint, chopped scallions, Feta cheese, a touch of cumin as options.

This is delicious eaten cold as well as warm: http://www.food52.com/recipes/7367_warm_red_quinoa_squash_salad

It's a good idea to make it warm, though, so the cheese melts just a little bit, and the tomatoes release their juice a bit more, creating a tasty dressing. I made it with red quinoa; I imagine it would be just as good with regular quinoa. ;o)
