Quinoa with scallions and "craisins" in a curry white balsamic vinagrette. The fruit and the curry powder compliment each other and the vinagrette keeps the quinoa moist.

Tabbouleh with quinioa instead of bulgar wheat.
Chopped Parsley, quinioa, chopped tomato, Lemon juice, olive oil, salt and pepper (at it's most basic).
Mint, chopped scallions, Feta cheese, a touch of cumin as options.

It's a good idea to make it warm, though, so the cheese melts just a little bit, and the tomatoes release their juice a bit more, creating a tasty dressing. I made it with red quinoa; I imagine it would be just as good with regular quinoa. ;o)
