It's a good idea to make it warm, though, so the cheese melts just a little bit, and the tomatoes release their juice a bit more, creating a tasty dressing. I made it with red quinoa; I imagine it would be just as good with regular quinoa. ;o)

Tabbouleh with quinioa instead of bulgar wheat.
Chopped Parsley, quinioa, chopped tomato, Lemon juice, olive oil, salt and pepper (at it's most basic).
Mint, chopped scallions, Feta cheese, a touch of cumin as options.

This is my own recipe http://www.food52.com/recipes... but if you do a quinoa search on this site you will find about 8 pages of recipes---at least.

Quinoa with scallions and "craisins" in a curry white balsamic vinagrette. The fruit and the curry powder compliment each other and the vinagrette keeps the quinoa moist.

This is my favorite, and you don't necessarily have to use red quinoa.
