and remember the scene in Juie/Julia where she marvels over cooking mushrooms in a large pan in a single layer without crowding them? Good advice. Too many mushrooms in a pan won't carmelize...brown is flavor.
My nephew the chef also showed me the method of baking the mushrooms at about 350 for 45 - 60 minutes in butter. They come out brown and rich and amazing.
