If I make a big batch (and I usually do), I freeze in several small batches and take it out as needed.
Or until it gets fuzzy. If you can keep people from double-dipping or sticking their fingers in it, it will last quite a while before it reaches the fuzz-state.
When I make hummus, I keep it in the frige for 7-10 days. I don't know if that's 'right', but I'm still alive and haven't gotten sick :) Enjoy your homemade hummus... it kicks store-bought hummus' unflavorful butt!
