I have a question about the recipe "Sweet Potato and Pancetta Gratin" from cnevertz.
What is the reason to have to spray the sheet of foil paper before covering the pan with it ??? To keep the stacks from sticking to the foil ?

Maybe cnevertz will weigh in, but I would assume that is the reason. It's the same with lasagne and other cheese covered dishes and gratins. You don't want to lose that top layer of topping to the tinfoil.
