One of my favorite comfort foods recipes I learned from my mother. South Indian style roast potatoes. Completely independent of recipe proportions,you just star with whatever quantity of fingerling potatoes you have, Boiled and peeled. Heat oil and add a teaspoon each of mustard seeds and urad dal, once the mustard pops, add the potatoes. Add paprika, turmeric, asafetida and salt, and coat the potatoes. Add a tablespoon of rice flour to make the porous 'crunchy'. Serve up with rice and sambar or rasam. #vegan #glutenfree #momtest

My Tamal roommate made this for us a lot. Everytime the spices are slightly different which makes it even better, also surprising! I never thought of adding rice flour, maybe thats her secret ingredient ?
