Fairly easy to make though takes a little time. Very hearty but fresh because of all the veg. Tastes better the next day once flavors have melded and rice has gotten a little crispy on the bottom. It was a little on the sweet side and I would've liked some heat. But my kids enjoyed it and that's always a bonus. As a point of clarification, are you supposed to add the marinade into the pot when you cook the chicken? I think yes (my husband and I went back and forth on this for way too long). But it would be great if Full-thyme Student could clarify and amend the recipe either way.

Thanks for your comment! Yes, you are supposed to add the marinade into the pot when you cook the chicken. I have just modified the recipe. Thank you for catching that. If you want some heat, I would either add a few teaspoons of crushed red chili flakes to the chicken marinade, or even just a tiny bit of sliced Thai bird chilies. A little goes a long way!!!
