Bacon & Egg Fried Cauliflower Rice

Some people make pasta carbonara when they’re too tired to cook. I prefer the bacon-and-egg combo with a zip of garlic, ginger, and scallions, so I make fried rice. Using cauliflower rice makes the dish healthy-ish and low-carb, if you’re into that kind of thing. To help this dish come together even faster, use 1 1/2 pounds of premade cauliflower rice instead of making your own.

Ingredients
  • 1 medium cauliflower (about 2 pounds), cored and cut into large florets
  • 4 strips bacon, thinly sliced crosswise
  • 3 garlic cloves, thinly sliced
  • 1-inch knob fresh ginger, peeled and sliced into matchsticks
  • 6 scallions, thinly sliced
  • 1 1/2 tablespoons low-sodium soy sauce
  • 1 tablespoon canola oil
  • 4 eggs, lightly beaten
Directions
  1. In a food processor, pulse the cauliflower until it resembles rice. (You may need to do this in batches depending on the size of your food processor bowl.) Alternatively, you can coarsely grate the cauliflower using a box grater over a large bowl.
  2. In a large nonstick skillet, cook the bacon over medium heat, stirring occasionally, until the fat renders, about 8 minutes.
  3. Using a slotted spoon, transfer the bacon to a paper-towel-lined plate. Add the garlic, ginger, and most of the scallions to the skillet and cook until fragrant, about 2 minutes. Add the cauliflower rice, soy sauce, and 2 tablespoons of water and cook, stirring frequently, until the cauliflower is nearly tender and the liquid has evaporated, about 3 minutes.
  4. Make a well in the center of the pan. Add the oil and, when it’s hot, add the eggs. Cook until the eggs are setting on the bottom and around the edges, then stir, breaking the eggs up into pieces into the fried rice. Cook until the eggs are completely set. Return the bacon to the rice, garnish with the remaining scallions, and serve.

In what universe is bacon considered vegetarian? You've listed bacon and egg tofu under the topic of vegetarian recipes. You need to move it somewhere else. And educate yourself. No amount of bacon, no matter how small, is eaten by vegetarians, and neither bacon nor eggs would be eaten by vegans. They're animal derived, and are fabricated in factories that cause suffering, health problems and negative environmental impact. Wake up, move it somewhere else!

This was so good. First time I really enjoyed cauliflower rice.. it really tasted like a hash brown skillet! I added some chopped okra to it that I fried up in the same pan just before adding the cauliflower (I love fried okra and add it to many dishes). Delicious. Thank-you!

Thank you for this delicious foray into Cauliflower rice, Kristen. It was the first time I made it and was delighted to see the food processor do a good job. Grateful I did not have to grate the Cauliflower. I did not have any fresh ginger so I squirted in ginger paste. I broke up the bacon and mixed it into the frying pan at the end. YUM!

I made it for breakfast so I didn't add the garlic,instead I added thai chili pepper,green pepper and sesame oil to the egg..it was very good
