Seeded, finely chopped bitter gourds

2 teaspoons
roasted sesame seeds

turmeric

1 teaspoon
sea salt

4 tablespoons
Dark brown sugar

1 teaspoon
coriander seeds powder

1 teaspoon
tamarind paste

1 tablespoon
sesame oil

1/2 teaspoon
red chilly powder
Directions

Mix salt and turmeric with the chopped bitter gourds, let rest for an hour. Drain or squeeze bitter juice out and discard juice.

Heat oil, stir fry onions, tomatoes, bitter gourd on medium heat for 30 minutes or until all vegetables are soft and mushy. Add red chilly powder, sesame seeds, coriander seeds powder, tamarind and brown sugar. Stir well and turn heat off. Serve hot with rice and bread.
