My go to soul satisfying dish is chicken broth. It doesn't even need noodles if it is done right, but homemade spaetzle is good. My favorite broth tastes like liquid chicken, and warms you through - a winter must!

My favorite one pot dish of the moment because it changes a lot, is a version of coq au vin with homemade Harissa, vinho verde, preserved lemons and tons of cauliflower.....

My favorite one pot meal is roasted chicken with tarragon. It makes for a great sauce which goes so well with not only the chicken but also the accompanying potatoes and other vegetables.

Asian fried rice with sliced steak & scrambled egg! Cooks so quickly, and I can use a myriad of veggies depending on what I have on hand (bok choy is a favorite though).

Baeckeoffe, a meaty stew-it has a whole pigs foot in the recipe, and a whole lot of different cuts of meats...beef chuck cut into small pieces, pork shoulder, and lamb shoulder with potato's, onions, leeks, carrots, celery, garlic herbs, juniper berries and a whole bottle of white wine........

I still love the sauerkraut and pork chop casserole that my mother used to make. The sauerkraut was so great after having the chop and bacon baste it.

Auntie Rosie's taco chicken: one whole chicken covered in water, simmered in broth with TONS of onions and garlic, cooked all day, then loaded with cumin, some coriander, salt and pepper, a little dash of chipotle chili powder for kick. Just cook cook cook until all the water is gone and the chicken dissolves from the bone, usually about 10-12 hours. Serve in taco shells with a little sour cream and cilantro. Yum.
