Sandwich with Smoked Salmon and a Chocolate Chip Cookie

Continuing my slider infatuation, today I made a robust, full-flavored sandwich with smoked salmon, sliced avocado, and pickled onion -- a grown-up lunch filled with all sorts of good nutrients. And to remind them they are children, I added a chocolate chip cookie for dessert.

Those pickled onions are truly amazing. I love to add them to grain salads for a little salty/vinegary kick. They are also really good finely diced and added to guacamole.

Here's a weird question: are those the ginger-pickled onions from Stinky?

Not a weird question -- but they're ones I made from this recipe: https://food52.com/recipes/2731-barbacoa-beef-cheek-tacos I'm sort of obsessed with these pickled onions. I make a big batch every couple of weeks and put them in everything.
