With a long weekend full of outdoor barbecues on the horizon, we'll need more than just a flimsy sandwich to keep us going long enough to catch the fireworks. And if our midday meal makes good use of our weekend drink of choice, then all the better. This chicken sandwich with beer-braised caramelized onionsc hits all the right marks: It's hearty enough to stave off hunger until it's time to throw hot dogs on the grill for dinner, it comes together quickly, and you only have to sacrifice 3/4 cup of your favorite beer so you can sip the rest while the chicken braises. Once it's cooked, pile pretzel rolls high with the braised chicken, spicy mustard, caramelized onions, and parsley. Call your neighbors over if you're feeling gracious, or celebrate your Independence Day by finding a sunny spot, grabbing a cold beer, and taking this one all for yourself.
German-Style Chicken Sandwich with Beer-Braised Caramelized Onions
Serves 4
For the chicken:
4 boneless, skinless chicken thighs or breasts
1/2 teaspoon dried sage
1/2 teaspoon dried fennel seeds
1/2 teaspoon dried rosemary
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon pepper
For the onions:
2 tablespoons olive oil
1 large yellow onion, thinly sliced into half-moons
1 teaspoon mustard seeds
1 teaspoon salt
1 teaspoon pepper
1 teaspoon dried thyme
3/4 cup your favorite beer
Chopped parsley, to taste
4 pretzel rolls
Extra-spicy mustard, to taste
