What Should We Do with Fresh Edamame?
Fresh edamame: beautiful but beguiling.
This week, our CSA share from Local Roots came with organically-grown fresh edamame, as well as peaches, tomatoes, shisto peppers, and eggplant.
We've obviously eaten the popcorn already (how could we not?), but what should we do with the rest of the share? We're thinking stir-fry. What do you think?

i'm gonna shell them, toast in some sesame oil and sprinkle on seaweed salt and cayenne, and then roast them as a snack!

Shell them Boil them in salted water. Slice up those tomatoes. marinate the tomatoes in a vinegar dressing...then layer them out topped with the Endamae, a buttermilk dressing and chives (or basil). Fried bacon garnish optional.

When I saw this, the first thing that popped in my head is blistering everything on the grill and doing an Asian twist on ratatouille (since you have peppers, eggplant, and tomatoes already!). You could add some rice vinegar and sesame to the mix. Or, if you go the stir-fry route, you could riff off of savorthis' edamame (https://food52.com/recipes...) -- I'll bet that sauce would be delicious with the other vegetables as well. For dessert, I would just slice and serve the peaches over ice cream and call it done! : )
