Some time ago my daughter wrote original recipes with avocados. As a clinical researcher, I tried to understand why avocado was conquering the world at a so fast path. I found a great number of health benefits in avocado, then how avocado must be combined to make your food become a real medicine. Certainly caught my eye. I eat several avocados a week in multiple variations. My fav is on sourdough with unsalted sardines (Trader Joes are good and budget friendly). A smear of good horseradish mustard and cracked pepper. But for presentation, lovely. It will be a trick to finesse, though as when they are at their best, they are firm enough to cut, but soft enough to smash without much effort. So getting that rose--or tulip--will take some practice I would think. But then I'm all thumbs. So I usually go for taste.

Awesome! I have a gluten free child and she LOVES avocados, and just like me, eats with her eyes. Can't wait to surprise her with this!

And if you cut it with a ceramic knife it won't oxidize for like forever, if you can keep from eating it that long.
