The Atlantic Beach Pie looks delicious but the saltine pie crust is definitely NOT allowed for Passover. I'm not even observant but that's just an obvious one!

Nothing beats Claudia Roden's tarte de Santiago or her almond and orange cake - both made with ground almonds.

Hey Carloine-- Totally love that you included my cake but it's chametz-- there's flour- and when flour & water meet they will rise and that's not allowed. "According to Talmud, chametz can only consist of grains which begin to rise when exposed to water. The Talmud lists the following five grain varieties as the only ones who do so (provided with their translation as widely accepted in the Orthodox Jewery[2]: שיפון Shippon (shifon)-rye, כוסמין Kusmin- spelt, חיטים Ḥittim-wheat, שעורים Se’orim-barley, and שיבולת שועל Shibbolet shual-oats. According to the Talmud, when any other grain is exposed to water it begins to decay or rot, and does not rise (sirachon). (The use of these five grains also have other applications in Jewish Law, including their exclusive suitability for the production of matzah.)"
