Many will tell you that fresh tomatoes need nothing at all to be perfect. Maybe a sprinkle of salt. Maybe a piece of toast and a swipe of mayonnaise. If you insist on doing something other than bite into the fruit like an apple, that is.
But we're a bunch of shameless lily-gilders around here. Yes, a tomato is wonderful—even perfect—with some salt or on toast. But what about stuffed tomatoes? Tomato pie? Tomatoes roasted until they pop, or until they melt down to jam? Tomatoes splashed with browned butter? What about them?
