Well, since you ask- tomato rice is a Portuguese favorite (I'm half Portugueser). In some ways similar to Joloff rice, it also has as many variations as there are cooks, but generally contains linguica and uses tomato for some or all of the cooking liquid.

I made this rice and it was DELICIOUS. I followed a recipe for Jamaican curry powder I saw online since I couldn't find one in stores. I'm glad to have the remainder around for other dishes, though I'd be interested in recommendations from the community on what I could use it in.

I toss fries in the curry powder once out of the oven or fryer; it's great in rice dishes, with meats in stews and stir fries in yogurt to make dips. Use it like you would all purpose serasoning

My grandmother's "Dabka Wadi"! (Gujarati cuisine from western India) A wholesome spiced chickpea dumplings cooked in yogurt chickpea flour soup. So full of nostalgia and comfort. My husband loves it too now it is our Sunday go to supper...

I've been lucky enough to have enjoyed Jollof rice on many occasions. Now I will have to try it on my own.
As far as the one dish that reminds me of my heritage it would rice, all the varieties of Haitian rice is amazing! But my ultimate comfort food is plain white rice with red kidney bean sauce.

As for what dish I would make from my Filipino culture (the way my parents cook!)...there are so many I can't live without. But if I had to choose, it would be fresh chicken (never from grocery store!) first cooked as adobo (with ginger/tomatoes/anchovy sauce), then adding water, bittermelon leaves (lots!!!), and long rice to make the best comfort food soup!
