15 Pastas You Can Make With Your Eyes Closed
There are the bolognese sauces, the lasagnas that are part-project and part-dinner, the tomato sauces that bake for 1 1/2 hours (yes, really!), and the ragus that need about 4 hours to reach their full, fall-apart potential.
Then, there are these 15 pastas. They are easy, with minimal steps and ingredients lists you can mostly look to your pantry for (some of them require just one pot, too!). They're here when you just don't have hours, or even a half hour, to devote to dinner. And while these pasta's can be made without looking, practically, we don't actually suggest you make them without your eyes closed. That's crazier than a 4-hour ragu.

Not even a recipe: toss hot pasta with creme fraiche, freshly grated parmesan, and a little bit of butter; optional fresh herbs and/or lemon zest.

Browned Butter Spaghetti
Brown butter in a small pot until dark brown; not black. Pour over hot cooked and drained spaghetti and stir to coat.
Top with grated Parmesan cheese and freshly ground black pepper. Serve with a crisp dry white wine.
Indulgent and delicious!
