In January, when some of us are trying to eat a little healthier—yet still put satisfying, comforting meals on the table—ground turkey is our best friend. It's high in protein, cooks quickly, and is exceedingly versatile: it works just as well formed into tender, lemony meatballs as it does in a rib-sticking chili or tongue-tingling mapo tofu. Turkey checks all the boxes: it's affordable, crowd-pleasing, and just on the right side of healthy, so it fits neatly into your new year's aspirational eating plans while actually keeping you full. Note: You can usually substitute ground turkey into many dishes which call for ground chuck, veal, or pork without any consesquences; just be aware that, as turkey has less fat, you may need to up the seasoning amounts slightly to compensate.
